1 tbsp. plus 1 tsp. butter
1/2 c. chopped onion
1 tbsp. plus 1 tsp. flour
1 tsp. low sodium instant chicken bouillon
1 tbsp. prepared mustard
pepper
16 oz. cooked potatoes, cut in 1/2 inch cubes
1 tbsp. plain dried bread crumbs
1 tbsp. grated Parmesan cheese
3/4 c. water

Preheat oven to 400º. In small pan melt butter, add onion and cook over medium heat until onion is translucent, about 2 minutes. Whisk in flour, bouillon, and water. Add mustard and pepper. Cook, stirring constantly until mixture thickens, about 2 minutes. Spray shallow baking dish with cooking spray. Spread potatoes and pour sauce over the top. Sprinkle with bread crumbs and cheese. Bake until lightly browned, about 20 minutes.
