Use your favorite bread recipe - EXCEPT - be sure to use ONLY active dry yeast and NOT fast acting yeast.
You also need to double the amount of the yeast the recipe calls for because during the freezing process, some of the yeast will die off and your bread won't turn out the way you want

Baking bread can be time consuming - so making your dough and freezing it can be a real time-saver.

Most bread recipes will call for a double rising.

If you are freezing your dough, let your dough go through the first rise in a greased bowl as the recipe says.

Punch down and knead, then shape into loaves and place in greased loaf pans. Cover with greased plastic wrap to prevent the dough from sticking to the plastic.

Place your loaf pans in the freezer and freeze for 10 - 12 hours. By then they should be totally frozen. Remove from freezer, remove plastic wrap and re-wrap in fresh plastic wrap. Place in plastic bags, force out air and seal well.

Remember to date the loaves and to bake in 4 weeks or less.

When ready to bake, remove loaf from bag and leave in plastic. Place in refrigerator overnight to thaw.

Once thawed remove plastic wrap, place in greased loaf pan, cover and let rise (this is your second rise).

Bake as per recipe instructions and enjoy.
