2 1/2 cups rolled oats (not quick)
1/2 cup rolled oats, processed into flour in the cuisinart
1/4 cup steel cut oats
1 cup (I used raw unsalted) almonds, chopped by hand
1 cup (raw unsalted) pecans or cashews, chopped by hand
1/3 cup (raw unsalted) sunflower seeds
3/4 to 1 cup loosely packed shredded coconut
3 T raw sesame seeds
1/4 cup (plus 2T more, if desired) maple syrup (cheap fake like Log Cabin is best!)
1/4 cup brown sugar (plus 2T more, if desired)
1/4 cup coconut oil, melted

Stir everything together well and press onto a large baking sheet. Pack it tightly together to keep it as one large "bar" so it stays in large chunks. Put in 250 oven for 1 hour and 15 minutes. If you have a convection oven, then you don't have to stir every 15 minutes and it stays in clumps better. If not, stir every 15-20 minutes so the edges don't burn.
