Stew:
1 lb. chuck or round beef
flour
2 carrots
2 potatoes
small onion
parsley, chopped
1 tsp. salt
pepper
1 c. tomato sauce (if desired)
Water to cover
Dumplings:
1 c. flour
1/4 tsp. salt
2 T. baking powder
1 egg

Directions:
Directions:
Cut meat into 2" squares; pound, dredge with flour, salt and pepper. sear meat well, using a little suet or fat. Add vegetables and enough water to cover. Simmer until meat is tender. Thicken gravy as desired.
For dumplings, mix the flour BP and salt. Add beaten egg and enough water to make a soft dough. Roll on floured board, cut into squared and place on top of stew. Cover tightly and boil 15 minutes without removing cover.

Variations: A good variety of vegetable can be added: Potatoes, onions, carrots, celery, and tomatoes are good in stews. Also, small amounts of green pepper and parsnips.
