2 cups grated zucchini
1 lemon, juice and grated rind
4 cups flour
1 tbsp baking powder
1 ½ tsp salt
1 pkg instant lemon pudding mix
4 eggs
1 ¼ cups oil
1 ½ cups sugar
1 tsp lemon extract
1 ¼ cups milk
½ cup poppy seed

Directions:
Directions:
Grease and line 2 loaf pans. Measure dry ingredients into large bowl; mix well. Beat eggs, sugar, oil, milk, lemon juice, and lemon extract. Pour in center of dry ingredients. Immediately add zucchini, lemon peel and poppy seed. Stir well. Bake at 325˚F for 1 hour and 10 minutes.
