5-6 medium peeled potatoes
1 can chicken broth
1 jalapeño
3 green onions
Salt and pepper to taste
2 boiled eggs
Garlic powder to taste
½ tbsp. mustard
½ tbsp. mayonnaise
¼ c verde sauce

Directions:
Directions:
In a sauce pan pour chicken broth over potatoes. Add water until level covers potatoes completely. Cook until potatoes are soft and easy to mash. Drain potatoes completely and transfer them to a large bowl. On a cutting board dice all the onions and peppers and add them to the potatoes along with the peeled and cut hard boiled eggs. Next add the spices and stir. Lastly add the verde sauce, mustard, and mayo. You may have to make adjustments to this recipe according to your personal taste. My family likes more heat, so we make this a little more spicy, but you can adjust the measurements of the verde sauce. Also, this potato salad is actually better served warm.
