Crab boil (Old Bay Seasoning), 1 Tbsp per quart of water
12 or so - red small potatoes
6 or so - (4-inch) smoked sausage link sausage (andouie is great)
6 or so - ears corn (I usually cut in half or thirds)
3 or so pounds - fresh shrimp, unpeeled
1 or so dozen - little neck and/or razor clams (make sure you clean them)

Fill a large pot with enough water to cover all of the ingredients. Add the crab boil spice and bring to a boil. Adjust the spice to suit your taste. When the water boils, add the potatoes and sausage. Cook on medium heat for 20 minutes. Add corn and cook for an additional 10 or so minutes. Add clams and cook for another 5 min and then add shrimp and cook for another 3 min (no more or the shrimp get tough!).

To clean the clams soak them in cool water when you get them home for 15 min a couple of times... you will see a lot of sand come out each time you rinse them... if you don't then you might not have fresh clams????

Learning to do this a lot as we migrate to Kitty Hawk. You can vary this in so many ways but the basics stay the same. Cook the taters, corn and sausage then add the seafood as it takes only a little time to cook!
