Shortbread:
1C Butter
2C Flour
4T Icing sugar

Filling:
2C Dates
1C Water
1 1/4 C Brown Sugar
1 tsp lemon juice

Icing:
1/4 C Butter
2 1/4 C Icing Sugar
2 T Milk
2 tsp Maple Extract (optional)

Directions:
Shortbread: Combine shortbread ingredients and roll out. Cut into circles (use a circle cutter or a small round glass). Press into a small muffin tin. Bake at 350º for 15 minutes. Keep a close eye on the shortbread - you want the cups to be light to golden brown.

Filling: Simmer filling ingredients in a saucepan. Cook until dates are soft and mixture looks like a gooey filling. When cool, fill shortbread cups with mixture.

Icing: Beat ingredients together until creamy or smooth. Pipe a swirl of icing onto each tart.
