3 chicken leg quarters
3/4 lb ground sausage
2 cup coarsely chopped onion
1 cup chopped green pepper
1 cup chopped red pepper
1 cup chopped celery
1 -14.5 oz can diced tomatoes
2 bay leaves
2 tsp dried thyme
1 tsp garlic powder
1 tsp crushed red pepper
1 tsp salt
1 chicken bouillon cube
1 Tbsp paprika

Chunk up the sausage. Mix spices together, mix 2 Tbsp in the crock pot with all ingredients except the chicken. Place chicken on top and sprinkle on remaining spice mix. Cover and cook on low 8 hrs or high 4 hrs. Serve over rice.

Very nicely spiced. You can put the red and green peppers in the last 2 hours of cooking time if you are going to be home. Original recipe calls for boneless skinless thighs, I use leg quarters and bone them after cooking.
