1 lb. lean bacon, diced
1 c. chopped onion
1/2 c. water @ 110º F
2 pkgs active dry yeast
2 tsp. sugar
1 1/2 c. milk
4 tbsp. sugar (less 2 tsp. already used)
2 tsp. salt
3 eggs, beaten
1/2 c. butter
5-6 c. flour

Cook bacon and onion together until bacon is cooked. Drain and cool.
Stir 2 tsp. sugar into lukewarm water. Sprinkle yeast into water. Leave 5 minutes until yeast bubbles.
Scald milk. Cool, add sugar, salt, eggs and butter.
Mix 2 cups flour, yeast mixture and milk mixture. Beat with a rotary beater until smooth, about 2 minutes. Add remaining flour gradually to make a soft dough which leaves the sides of the bowl. Place in a LARGE greased bowl. Cover and let rise 45 minutes to 1 hour. Punch down and let rise again for 45 minutes. Roll out dough 1/4 at a time. Cut out 3" circles. Roll circles of dough around about 1 tbsp. bacon mixture making a crescent shaped roll. Put on cookie sheet with seam side down. Let rise in a warm place about 15-20 minutes. Brush with egg/milk glaze. Bake approximately 10 minutes @ 375ºF.

These little crescent shaped buns require a bit of extra time but the end result is worth the effort. Be sure to watch for them opening up and "smiling" during baking. Because of my husband's Latvian heritage we serve these buns at Christmas time, on birthdays and other special occasions.
