For every 2 1/2 lbs use 1/2 lb soda
1/2 lb slaked line
water

To get ready for Christmas eve, begin Dec. 9th.
Divide fish into 2 or 3 pcs and put in a wooden tub. Add cold water to cover and place in a cool place. Changing the water every day for 4 days.
Then scrub fish on both sides and remove. Empty tub. Cover bottom with
lime, arrange layer of fish, skin-side down, on top. Cover with lime and add another layer of fish, skin side up and cover with lime.
Dissolve soda in a little warm water; add cold water. Pour slowly over fish until very well covered. Then add a light press over the tub; a board with large stone on the top.
Soak fish 5-7 days until soft enough to let finger penetrate easily. Remove. Rinse tub return fish and cover with fresh water. Change water every day first three days, later twice a week. Fish is ready to cook after 4-6 days in fresh water. Cook a small pc. to test. Fish may be kept in water a long time. But eat before it gets too hard.
