1 large Leg of Lamb
3-4 large cloves of Garlic, slivered
1 1/2 lb Potatoes, thickly sliced
2 large Onions, sliced
1 lb Tomatoes, sliced
1 tsp Oregano
Salt & Pepper

Directions:
Directions:
Preheat oven to 450º.

Wipe leg of lamb clean.
Pierce lamb all over with the point of a sharp knife and insert slivers of garlic at different depths.
Rub generously with salt and pepper.
Put lamb fat side down in a large roasting pan and surround it with the sliced vegetables.
Sprinkle with oregano.
Turn oven down to 350º. Place lamb in oven.
Roast for 1 1/2 hours for rare, longer for more well done.
Baste lamb and vegetables occasionally.

For firmer vegetables, roast lamb for 45 minutes before adding them.
