Ingredients:  
1 skinless boneless chicken breast, cut into bite-size pieces
1 egg, beaten
flour
2 Tbsp oil
handful of pecans
1/2 leek, chopped - use white & green
handful of mushrooms, stems removed and chopped
S & P

Directions:
Directions:
Dip chicken in egg & then dust with seasoned flour.
Heat oil, add chicken. Cook 2-3 minutes, then add leek and mushrooms & continue to cook 5-6 minutes. Season and serve.

Great with potatoes.
