3/4c. Shortening
2 c. Flour
1/2 tsp. Baking Powder
1/2 tsp. Salt
1 tsp. Lemon Juice
2 Egg Yolks
1/3 c. Ice Water
FILLING:
3lbs. Tart Apples, cored, peeled and sliced
1 c. Water
1 1/2c. Sugar
1 tsp. Cinnamon
1/4 tsp. Salt
2 T. Cornstarch
1/4c. cold Water
Powdered Sugar Frosting:
1T. Butter, melted
1 T. Lemon Juice
2 c. Powdered Sugar
2 T. Milk or more, as needed

Mix flour, baking powder and salt in a large mixing bowl. Cut in shortening.
In a separate bowl, mix together the lemon juice, egg yolks and ice water.
Sprinkle over the flour mixture. Combine only until soft dough forms.
Pat into a rectangle, wrap in plastic wrap and refrigerate for 30 minutes.
Peel, core and slice apples into thick slices. Set aside.
Make a slurry with the cornstarch and cold water. Set aside.
Boil cup of water with sugar, cinnamon, and salt.
When boiling, add slurry. Cook for about five minutes stirring constantly.
Add the apples and cook about 10 minutes. Remove from heat and set aside.
ASSEMBLY:
Preheat oven to 450°.
Divide dough into two pieces, one larger than the other.
Roll out the larger piece to fit the bottom and sides of a 9 x 13 pan.
Pour filling into pan.
Roll out other piece of dough to fit on top.
Crimp pastry together. Cut decorative slashes in the dough to vent for steam.
Bake for 20 minutes.
Reduce heat to 350° and bake for another 25 to 30 minutes.
Remove from oven and let cool completely.
MAKE FROSTING:
Mix butter, lemon juice and 2 tablespoons of milk together.
Add powdered sugar. Stir until combined and thickened.
If too thick, add additional milk about a teaspoon at a time.
If glaze gets too thin, add more powdered sugar.
Drizzle frosting on top of completely cooled Apple Slices.

Sissy Mary notes she has made this recipe for over 50 years. Mama Faye used to make these. It was my (Patti's) favorite dish. I would bribe her to make by riding my bicycle around Holly Grove and picking green apples out of trees. Now these apples would have worm holes in them, and be brown but, she would cut them up and laugh about how I conned her to make them.
