8 oz. (1/2 pkg.) lasagna noodles
1 container (15 oz.) ricotta cheese
2 cups shredded fresh spinach leaves
2 eggs, lightly beaten
1 1/2 tsp garlic powder
salt and pepper
1 jar (26 oz.) good quality spaghetti sauce
2 c. (8 oz.) shredded mozzarella cheese

Directions:

Preheat oven to 400ºF.
Cook and drain pasta according to package directions.
In a bowl, combine ricotta, spinach, eggs, garlic powder, and salt and pepper to taste.
Spread 1/2 c. spaghetti sauce in a 13 x 9 in. baking dish.
Layer with 3 lasagna noodles, half the ricotta, 1/2 c. mozzarella and 1/2 c. sauce.
Repeat layers once.
Top with remaining lasagna, sauce and mozzarella.
Bake (uncovered) in over for 35 to 40 min.

This is a great potluck dish that vegetarians can eat too. For you overachievers out there, try using fresh mozzarella, homemade marinara sauce, and fresh pasta....it will taste even better!
