1 package white cake mix

Icing:
1 box powered sugar
Grated lemon rind of 1 lemon
Grated orange rind of 1 orange
Juice of 2 lemons
Juice of 2 Oranges

Directions:
Mix as directed on cake box. Put 1 teaspoon into very small greased mini muffin tins. Bake at 325 degrees. Watch because they don't take long (8 to 10 minutes).

Icing: zest 1 orange and 1 lemon then add the juice the 2 oranges and 2 lemons in a bowl. Add box of 10x sugar and stir until no lumps of sugar.

While hot, remove from pan and dip in icing.

Angie's version:
Instead of the directions on white cake mix, I use the following (same measurements as called for on box):

Milk instead of water
Melted butter instead of oil
4 eggs instead of 3

All other directions are the same

NOTE: I make the icing before placing muffins in to bake. This way it's ready when they come out of the oven.

You can dip muffins in the icing mixture or drizzle the icing over the muffins - either way they disappear fast at parties!
