Pulp perfectly ripe grapes, mash, put in an open vessel for fermentation. Let stand 48 hrs., draw off and measure the juice.
For every 3 gal. of juice, take one gal. of water which is poured over the grapes and mixed well with them.
After 24 hrs. draw off the juice and carefully press the pulp.
Mix the different juices together and measure, adding 1 gal. of water to every 3 gals. of juice. For every gallon of liquor, add 3 lbs. of sugar unless the grapes are very sweet when 2 lbs. will be sufficient. Stir well and put into a clean cask, leaving the bung loose for about one week, then drive in tight. In 6 or 8 months, rack off and bung tight in a clean cask.
