1 tbsp. Vegetable oil
3/4c. Finely chopped onion
3/4 c. Finely chopped carrots
3/4 c. Finely chopped celery
1 lb. Ground beef
2 tbsp. Tomato paste
1 (14 oz.) Can chopped tomatoes
3/4 c. Beef broth
1 tsp. Dried thyme
Salt and pepper to taste

Asiago Mashed Potato Topping:
2 lb. Russet potatoes, peeled and diced
2 tbsp. Butter
1/4 c. Milk
1/2 c. Finely grated Asiago cheese
1/2 tsp. Ground white pepper

Directions:
Directions:
Preheat oven to 375º. Oil a 1 qt. baking dish.

Saute the onion, carrot and celery in the oil in a large skillet over medium-high heat until the vegetables have softened, about 5 min. Add the ground beef and brown, about 7 min. Stir in the tomato paste, tomatoes, beef broth and thyme. Reduce heat and simmer for 15 min. Season to taste.
Meanwhile, place the potatoes in a large saucepan with enough water to cover and bring to a boil. Cook, uncovered for 15 min., or until the potatoes are tender when tested with a fork.
Drain the potatoes and mash with the butter, milk, Asiago cheese and white pepper until the potatoes are smooth and the cheese has melted.
Spoon the beef mixture into the dish, top with the potatoes and smooth with a spatula.
Bake for 35 min., or until topping turns golden brown all over. Let cool for 15 min., then slice and serve.
