2 sticks unsalted butter
2 cups sugar
2 1/2 cups flour
1 T baking powder
1 t salt
4 eggs at room temp
1 t vanilla extract
1 cup milk (may sub low fat or non fat)

2 sticks unsalted butter, at room temp
2 pounds confec sugar
1 t vanilla extract
1/2 cup heavy cream (may sub whole, lowfat or nonfat milk)
food coloring (optional)

Directions:
Directions:
preheat oven to 350. lightly grease and flour 2 9' cake pans. line the bottom with parchment paper.
melt butter and let cool to room temp.
combine sugar, flour, baking powder and salt in large mixing bowl. medium speed add butter in several additions. beat for 2 mins, - should resemble cornmeal.
in separate bowl, combine eggs, vanilla and milk. add to cake mixture in 2 batches (scraping bowl once). beat on medium speed 2 mins, or until smooth.
bake for 35 mins, or until toothpick is clean.
transfer to wire rack, cool for 20 mins. frost cake. Cake can stand at room temp for 1 hour. any longer than that you have to refrigerate it until ready to serve.

Icing:
beat sugar until fluffy. on low, add sugar in batches, increasing to high after each batch. add vanilla and cream in steady stream on low until incorporated. add few drops of food coloring if you want. Beat on high for 8-10 minutes, until light and fluffy. This makes a lot of icing. trust me.
