1 lb fish fillets slightly frozen or shrimp
1 egg white beaten with a dash of salt until frothy
1 tbsp cornstarch
1 onion shredded into long strips
¼ cup peas
3 tbsp sugar
2 tbsp vinegar
4 tbsp ketchup
2 stalks green onions
Seasoned salt

Cut fish into cubes. Marinate in egg white and 1 tbsp. cornstarch for 1 hour. Make sure that all the fish is coated. Roll each cube in cornstarch to completely coat. Heat oil to smoking. Fry fish until browned but don’t break fish. Take out the fish and clean the wok. Add 2-tbsp. oil to wok. Fry onions until transparent. Add seasoned salt, sugar, vinegar, and ketchup. Dissolve 1 tbsp. cornstarch in ¼ cup water. Add to boiling mixture and bring back to boil. Add fish and peas. Sprinkle green onions on top.
