4 large boneless chicken breasts (or eight small)
½ t salt
¼ t black pepper
2 T olive oil
2 T butter
5 T chopped green onions
3 T chopped parsley
3 T dijon mustard
¼ c chicken broth
juice of ½ lemon or lime
2 T of white wine or brandy (leave out if you don't have)

Directions:

Pound chicken breasts pounded thin and sprinkle with salt and pepper. Heat 1 tablespoon each of butter and olive oil in large skillet. Cook chicken over medium high heat for about 4 minutes on each side. Transfer to platter and cover with foil to keep warm. Add 3 tablespoons of scallions, citrus juice, parsley, mustard and wine to pan. Cook 15-20 seconds whisking constantly. Whisk in chicken broth and stir until sauce is smooth. Whisk in remaining butter and oil. Pour sauce over chicken and sprinkle with remaining 2 tablespoons of scallions. Serve immediately. Make four servings.
