4 chicken bouillon cubes
1 qt. water
1 c. diced celery
1 c. diced onion
2-1/2 c. cubed potatoes
1 c. diced carrots
1 lg. (20 oz. pkg) frozen mixed vegetables
2 cans cream of chicken soup
1 lb. Velveeta cheese, cubed

Directions:

Bring the first 4 ingredients to a boil and then simmer for 20 minutes with the lid on the pot. Add the next 3 ingredients and cook until tender (about 30 min.) with the lid on. Add the last 2 ingredients and heat until the cheese melts.

I usually used the carrots, beans, peas, corn mixture for the frozen veggies...the girls like me to stay away from the one that has lima beans in it.
