1 pkg (13-16 oz) Penne or Spiral Pasta
1-2 cloves of garlic
1-2 Tbls olive oil
Chopped carrots, broccoli, onion, red pepper
Diced chicken or ham
Shredded Parmesan cheese
Salt and Pepper
Fresh diced tomatoes

All amounts can be cut into whatever works for you.
Optional: 1 jar Alfredo sauce

This is a meal we play around with and make with whatever happens to be available. Hopefully my instructions won't be indecipherable!)

Cook the pasta as directed and while it is cooking, chop up the veggies on hand. We have made it with all, some, or even no fresh veggies and used a frozen mixed veggie bag instead.

Heat olive oil in deep skillet. Crush garlic cloves with side of a knife and sauté with the oil for a couple of minutes. (if you are using Alfredo sauce, cut down on oil and do 1 clove of garlic)

Add fresh veggies to skillet and sauté; if using frozen, thaw in microwave, drain well, then add to oil carefully. When veggies about halfway cooked, add fully cooked, diced chicken or ham. We like either, or even a few strips of crumbled bacon, or many times, no meat at all. Whatever you like and have on hand.

When vegetables reach preferred done-ness, add pasta and mix together. If using sauce, add and mix to coat. Heat for a few minutes more, add salt and pepper to taste. If not using sauce, add about 2-3 oz Parmesan cheese and mix in. We used a basic mixed shredded cheese once and my kids especially liked that variation. I have added Italian Seasoning, or just basil, but my family likes the simplest versions the most.

Serve topped with diced tomatoes (OK, only Susie and I do this! My boys like a little cheese melted on top).
