1/3c. Extra Virgin Olive Oil
4 Garlic Cloves, chopped fine
1/2 c dry White or Red Wine
1/2tsp. crushed Red Pepper
20 ounce can ripe Tomatoes, peeled and chopped or 28 ounce can Imported Italian Tomatoes. Buy a good quality brand.
pinch of seasoned Salt, such as Lowry's
pinch of Sugar
2T. chopped fresh Basil

In a heavy saucepan heat olive oil over medium heat. Add garlic and sauté until it begins to color lightly. Pour in wine and cook till a good bit of liquid evaporates. Add the crushed red pepper, tomatoes, salt, and sugar and cook over low heat for 20 minutes until sauce thickens slightly. Add the basil and cook 5 minutes more. Makes about 21/2 cups or enough sauce for 1 pound of pasta. If you want to add meat, I have used Hot Italian Sausage crumbled and browned in a separate pan and Italian Turkey Sausage. It's delicious with out meat, though.
