1 package 18 ounces frozen cheese ravioli
3 tablespoons olive oil
I medium eggplant chopped
1 small onion chopped
1/4 cup chopped carrots
1/4 cup chopped celery
2 8 ounce cans tomato sauce
1 14.5 ounce can diced tomatoes with roasted garlic
1/2 tsp sugar
1/8 tsp pepper
I added to this recipe, browned sausage, chopped peppers, fresh basil, fresh oregano, and fresh garlic

Cook ravioli
Meanwhile heat oil in a large skillet over medium heat. Add eggplant, onion, carrot and celery. cook 6 minutes, stir frequently. Add tomato sauce undrained tomatoes, sugar and pepper, mix well. Bring to a boil. Reduce heat to low, simmer 10 minutes.
Drain ravioli, place in large serving bowl. Add eggplant mixture and toss lightly.
