1 1/2 cups of Bisquick/Baking mix
1 cup of Milk (any will do I use 2%)
2 eggs
1 pk frozen Spinach thawed and pressed to remove water
1 md red onion small diced
8oz of cheese (choice) feta works well with spinach

Directions:

Spray a baking dish with cooking spray
place spinach evenly around dish do the same with onions cheese.
Other ingredients can also be added black olives, tomatoes, cooked meats (just make sure the pieces are bite size)

In a separate bowl mix bisquick/baking mix milk and eggs. add 1/2 cheese and mix in. pour over spinach mixture.
Add remaining cheese.

Bake at 350 till a fork/toothpick comes out clean. Let sit for 5 minutes before cutting.

Can be a meal in its self or a side dish.
If you make it in a pie dish as a meal for itself it will feed 4 if you do it as a side dish you should get 8 to 12 pieces.

This reheats very well in the microwave if you reheat it in the oven do not put the remaining pieces an the pie dish in the oven it will just make the dish hard to clean. Put in a piece of foil and warm it up in the oven. Also once you empty the dish of the baking mix part wash right away it will be much harder to clean afterwards.
