7 cups sifted flour
100 ml (about 1/2 cup) Olive Oil
Oregano
Basil
lots of Top quality Mozzarella Cheese
top quality Parmesan cheese (in block form
2 quarts of Classico Pasta Sauce (one with sausages in it..the other with sweet basil)
1/4 cup Wine Vinegar
2 tbsp honey
2 cloves or 1 tbsp of minced garlic
Toppings to suit (pepperoni, salami, Italian sausage, mushrooms, green peppers, pepperocinies (my favorite!)

1. Put a tsp of yeast and a tsp of sugar in 1/2 cup of warm water and let it sit for 10 minutes
2. Put 7 cups of flour in a large bowl (a Kitchen Aid mixing bow works great)
3. Add 2 cups of warm water to the flour
4. Add 1/2 cup of Olive oil
5 add a large pinch of dry oregano and a large pinch of dry basil

If the yeast has set for 10 minutes or more then add it to the mixture

6. Mix until the dough forms (it should be quite gooey).
7. remove the dough from the mixing bowl and Knead it roughly for at least 10 minute The longer you knead it the better it gets. 10 minutes is the minimum!
8. Form the dough into a ball and place it back into a large clean bowl
with olive oil smeared on the inside (prevents the dough from sticking)

Let the dough sit in a warm area (not an oven!) for at least 3 hours so it will rise well.

Now prepare your sauce.
Empty 1/2 jar of classico sausage pasta sauce and 1/2 jar of classico sweet basil sauce into a mixing bowl. Add 1 tbsp of ground garlic (fresh is best but minced is OK), add 1/4 cup vinegar, 2 tbsp honey and more oregano and basil to taste, mix gently and refrigerate until time to place in pizza crust.

After the dough has risen for at least 3 hours divide the dough ball into two parts and create two pizza skins (crusts) from them on large pizza stones (you can use metal Teflon coated pans but the quality will suffer).

Preheat over to 375 degrees

Put a teaspoon of garlic in 1/4 cup of olive oil and mix well.

Use a pastry brush to spread the olive oil/garlic mixture over the surface of the pizza skin.

Spread 1/2 of the sauce you prepared on each pizza.

Spread a thick layer of mozzarella over each pizza

Grate Parmesan from the block over each pizza (to taste)

Grate Gorgonzolla or other cheese over pizza (to taste)

Spread other toppings. (I like to add the pepperocinies or green peppers raw after the pizza has cooked.)

Sprinkle ground pamesan lightly over toppings

Place pizza stones & pizza into preheated oven.

At 20 minutes check the crust. 20-25 minutes is usually perfect for a delicious golden crust that is not crunchy or soggy.

This is Darrel's own recipe. He worked in Pizza Parlors while in college, Shakeys Pizza Parlor in Bellingham, Washington and the Pizza Mia in Ellensburg, Washington. He believes that great Pizza has great dough and great sauce and requires the best high quality ingredients available...he says it is worth the cost!
He also says that the real test of a great Pizza is how it tastes when it is cold (a day or two after you cook it).
