1 gallon canned green beans
1/4 C fat (flavored is best...bacon, pork, or chicken)
1/4 C sugar
1/4 C chopped onion
1/2 C vinegar

Directions:
Pour drained green beans into large casserole or hotel pan. Cover with foil and heat in oven at 350 for about 30 minutes. Saute onion in fat till tender but not browned...add sugar, and vinegar...simmer 10 minutes on low temp. When beans are hot from the oven, drizzle with seasoning mixture and top with either toasted almonds or diced pimiento.

Recipe can be doubled or even tripled. 3 gallons of beans will serve around 65 people (Seasoning amounts for 3 gallons are 3/4 C each of fat, onion, and sugar+1 1/2 C vinegar.)

This is about as good as you can get with canned green beans!!! Our luncheon groups at the Woman's Club ask for this recipe over and over.
For home use, look in index under B.J.'s savory beans.) If you don't have much bacon fat these days, try the pork fat sold for tamales at Latino grocery stores...sold in pint containers and works great for flavor...also good for coating skins of potatoes to bake. I brush it on potato skin and sprinkle with Lawry's Seasoned Salt...a favorite with folks who love the skin.
