1 unbaked 10 inch pie crust
340g silken tofu (dessert tofu)
0.5 cup pure maple syrup
0.5 cup firmly packed brown sugar
0.25 cup cornstarch
1.5 tsp cinnamon or cardamom
0.5 tsp sea salt
0.25 tsp nutmeg
0.25 tsp ginger
1/8 tsp cloves

Directions:

- Prepare pie crust in pie plate
- Place all ingredients in blender and blend until creamy smooth
- Pour mixture in to unbaked pie crust and smooth top with spatula
- Bake at 350 º for 60 minutes until crust is lightly browned. Don't worry if the centre is still soft, it continues to firm up as the pie cools
- Serve chilled or at room temperature
