6 to 7 lb. beets
3 c. cider vinegar
4 c. sugar
1/2 lb. onions, sliced if desired

Place clean beets in a large enamel kettle; cover with boiling water, cover and simmer until beets are tender (30 min to 1 hr) depending on size of beets. When done, drain, plunge into cold water, then slip skins and stems off. While beets are still warm, put them into a large preserving kettle with vinegar, sugar (and onions). Heat just to simmering. Taste and if the syrup is too sour, add more sugar and bring again just to boiling. Pack in hot sterilized jars and pour the hot syrup over them to cover the beets, leaving 1/4 inch headroom at top of each jar. Seal immediately.
