2 cups chicken diced
10 1/2 ounce can cream of chicken soup
1 cup chopped celery
2 teaspoons grated onion
1/2 cup chopped walnuts
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon lemon juice
3 eggs - hard boiled and sliced
3/4 cup mayonnaise
2 cups crushed potato chips

Directions:

Preheat oven to 450º Grease a 2 quart casserole dish.

In bowl, combine all ingredients except potato chips. Pour into casserole dish. Top with crushed potato chips. Bake for 15 minutes. Serve over rice.

This was handed down to me from my mom. She also would lighten up the calories and fats by using reduced fat cream chicken soup, light mayonnaise and even light potato chips. Really a comfort casserole.
