Add a chopped onion, a bay leaf, an herb (such as thyme), and a little acid (such as lemon or white vinegar) into a wide pot or saucepan. Cover by at least 3 inches and turn heat to high. When water comes to a boil add a little kosher salt to taste. Gently lay in your cleaned fish filets and bring back to a simmer. The cooking time obviously depends on the thickness of the fish but it shouldn’t take very long. As soon as it starts flaking check for doneness. Carefully remove fish with a slotted spoon and pat dry. Break up the fish for fishcakes or fish salad or serve as is with basic condiments.
