1 cup cake flour
1 1/2 cups sugar
1 1/4 cup egg whites (9-11 medium eggs)
1/4 tsp. salt
1 1/2 tsp. cream of tartar
4 egg yolks
3 T cake flour
1/4 tsp. orange extract
1/2 tsp. vanilla

Directions:
Pre-heat oven to 350º. Sift 1 cup cake flour and 3/4 cup sugar together 3 times. Beat egg whites, salt and cream of tarter until very foamy. Sprinkle 3/4 cup sugar, a few T at a time, over egg whites. Beat until stiff peaks form. Stir in dry ingredients, 2 T at a time, folding carefully, but thoroughly. Divide batter in half. Beat 4 egg yolks until thick and lemon colored. Blend 3T cake flour and orange extract into yolks. Fold this mixture into half the batter.
Add 1/2 tsp. vanilla to remaining batter. Pour yellow and white batter alternately into ungreased 10 inch tube pan. Bake at 350º for 40-50 minutes. Cool inverted for an hour.

Wonderful with ice cream!
