canola or olive oil
1 small onion, finely chopped
4 c. chopped rhubarb
1 small apple, chopped
handful of raisins
1 tbsp fresh, grated ginger
3/4 c. sugar (white or brown)
1/3 c. red wine vinegar
1 cinnamon stick

Directions:
Directions:
Heat a drizzle or oil and cook onions for 5 minutes. Add rest of ingredients and bring to a simmer. Decrease heat and cook for 30 minutes.

Makes 2 1/2 cups. Excellent on grilled pork tenderloin, but also works on ice cream!
