2 cups shortening
2 cups white sugar
1 29 oz. can pureed pumpkin (not pie filling)
2 eggs
2 tsp. vanilla
4 cups all-purpose flour
2 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon

FROSTING:
12 T butter (1 1/2 cubes)
1 cup milk
2 cups firmly packed brown sugar
6+ cups powdered sugar
1 T vanilla

Directions:
Directions:
Cream together shortening and sugar; don't whip. Mix in pumpkin, eggs and vanilla. In a separate bowl, combine flour, soda, baking powder, salt and cinnamon. Add to pumpkin mixture. Use an ice cream scoop for large cookies. Bake at 350º for 12-16 minutes, depending on size of cookies.

FROSTING:
Combine butter, milk and brown sugar in a large saucepan. Boil for 2 minutes. Remove fro heat and let cool Be sure mixture is cool before adding powdered sugar and vanilla. Add more powdered sugar if too thin.
