2 chicken breast, boned (halves)
2 tbsp cornstarch
5 tbsp soy sauce
3 tbsp sherry
1/2 cup water
2 tbsp sugar
3 tbsp oil
2 green peppers, chunked
1 onion, chunked
1/2 cup blanched peanuts

Directions:
Directions:
Cut chicken into 1/2 x 1/2 inch strips. Blend 1 tbsp cornstarch, 1 tbsp soy sauce, and 1 tbsp sherry. Stir in chicken. Let stand for 30 minutes. Combine remaining cornstarch, soy sauce, sherry, water, and sugar and set aside. Heat 1 tbsp oil in frying pan and brown chicken, set aside. Heat remaining oil in same pan. Put in green peppers and onions until they are tender yet crisp. Stir in chicken, peanuts, and sauce until thickened. Serve over rice.
