2 lb fillets, ¾” thick
garlic olive oil
salt, freshly ground pepper
1 ripe mango, peeled & cut into ½” cubes
1 bell red pepper, cubed
4 green onions, finely chopped
¼ cup P.C. Memories of Hong Kong Spicy Black Bean & Garlic Sauce
2 tbsp P.C. Dry Garlic Sparerib Sauce
2 tbsp P.C. roasted garlic olive oil
1 tsp rice vinegar or fresh lemon juice
1 clove garlic, finely chopped

Directions:
Directions:
Cut fish into 1½” chunks. Brush all over with olive oil. Season with salt & pepper to taste. Let marinate at room temperature while preparing salsa.

Salsa: Mix together remaining ingredients. Season with salt & pepper to taste. Set aside.
On greased grill over med/hi heat, cook fish 3-4 minutes per side, or until natural divisions appear.
Arrange chunks on platter. Serve with salsa.
