1 c. Sun-dried Tomatoes, drained from oil
½ c. Green Olives with Pimento (no pit)
1 T. Garlic (or 2 cloves)
½ c. Parmesan©, grated
(optional) ¼ Cup Pine Nuts
¼ c. Balsamic Vinegar
½ c. Olive Oil

1 Box Rotini Vegetable Noodles (Catelli©, 375g)
4 L Water
Dash of Salt

Fill pot with 4 Litres of water, dash of salt & bring to a boil. Add Full box of noodles to boiling water. When water returns to a boil cook and stir pasta for 9-11 minutes. Take off heat, drain (keep a little of the boiled water from pot)

While pasta is in water, begin to make your paste.

In a blender, add ALL of your ingredients, and blend. Turn frying pan on (medium heat), and when heated add your paste. Stir until heated through. Add your strained hot noodles to pan, stir. When everything is heated through, put on a plate, and serve. You may want to garnish with a little Parmesan© cheese (if any is remaining).
