Amma's Raspberry Jam Recipe

3 c Raspberries
3 c sugar
1/2 of a Lemon juiced
T of butter

Directions:
Directions:
Place berries sugar and lemon juice in a pot and bring to a boil.
Allow to boil at a rolling boil for 3 minutes.
Remove from heat.
Add butter and beat for 3 minutes. (I use an immersion blender now a days, but Amma and Gudrun used a hand mixer)
The butter really is used to reduce the foam at the end of the process.
Almost there!
Pour into sterilized jars, seal and wait for the popping.
It's as simple as that!

As a personal! I can remember sitting in the old homestead kitchen and watching Amma and my Mom make home made bread and Jam.
It was a treat I always looked forward to. In Amma's day most of what I remember is all of this on the wood stove. Even after they installed electricity Amma still used the wood stove, both, inside the house and in the "Summer Kitchen". I'll talk more about that later.
