2 cup sugar
3 each eggs
1 cup oil
2 t. vanilla
3 cup flour
1 t. baking powder
1 t. soda
1 t. salt
1 cup nuts
2 cup zucchini, grated
1 can (8 oz) crushed pineapple

Directions:
Directions:
Cream sugar and oil. Mix in vanilla and eggs. Sift dry ingredients together and mix in. Add pineapple, nuts and zucchini. Bake in a preheated 350 degree oven for 1 hour. Cool in pan 10 minutes and remove to rack.

A very rich and sweet bread, more like a cake than a bread...but a long time staple and really good.
