1 ½ cups dried split peas (no need to soak)
3 or 4 cups diced ham
One ham bone
4 stalks celery
3 each bay leaves
1 small onion, chopped
10 sprigs parsley, optional
3 each carrots, peeled and sliced
¼ teaspoon black pepper

Directions:
Directions:
Place in stockpot and cover with cold water. Place lid on pot and bring to boil. Simmer for 1 ½ hours. Uncover and simmer for another hour. Strain, pick out and meat and add to soup. Add salt if necessary.

A recipe from the the restaurant that the Urbaniak Brothers (Gerry & Andy) started. They branched out from their famous, huge meat market. Dan worked at the market as a young boy! Gramma got this recipe from the Erie Daily Times (the Erie newspaper).
