1 can crushed pineapple in juice, undrained
2 cups boiling water
2 packages Jell-O orange flavor sugar free gelatin
1 3/4 cups thawed Cool Whip Lite
1 can (11 oz.) mandarin orange segments, drained
1 cup miniature marshmallows
1/2 cup Bakers angel flake coconut (optional)

Directions:
Directions:
Drain pineapple, reserving juice. Add cold water to make 1 cup. Stir boiling water into gelatin in large bowl 2 minutes, or until dissolved. Stir in measured liquid. Refrigerate about 1 1/4 hours or until slightly thickened. Stir in whipped topping with whisk until smooth. Refrigerate 10 minutes or until mixture will mound. Add remaining ingredients, spoon into 6 cup mold, and chill 4 hours or until firm.
