14 double Graham Crackers, crushed
3 T. Sugar or Splenda
1/2 c. Butter or Margarine, melted





Filling:
2 pkg (3.4oz) Instant Banana Pudding
3 c. Skim Milk, cold
3/4 c. Coconut
1 tsp. Rum Extract
2 large Bananas
1 20 oz. can Crushed Pineapple, drained
8 oz. Fat Free Cool Whip, thawed

Combine graham cracker crumbs, sugar and butter, mix well. Press into the bottom of a 13x9 pan. Refrigerate while preparing filling. Prepare pudding according to package directions using 3 cups of milk. Stir in coconut and rum extract. Set aside. Slice bananas over crust. Spread pudding over the bananas. Combine pineapple and cool whip. Spread over pudding mixture. Refrigerate at least 30 minutes.
