1 lb. Chicken Breasts, boneless
4 tsp. Vegetable Oil, divided
2 Garlic Cloves, pressed
4 c. Broccoli Florets
3 Celery Stalks, sliced
3 Green Onions, sliced
1 1/2 tsp. Ginger
2 pkg. Ramen Noodles, any flavor
1/3 c. Cashews

Sauce:
1/2 c. Chicken Broth
1/4 c. Creamy Peanut Butter
2 T. Soy Sauce
1 T. Honey
Dash Ground Red Pepper

Sauce: Combine all sauce ingredients in a small bowl. Use a whisk to blend well but mixture will not be smooth. Set aside.

Break noodles in half, place into a mixing bowl. (discard seasoning packet or reserve for another use) Boil 4 cups of water. Pour over noodles to cover. Let sit 3 minutes and drain.
Cut chicken into 1" pieces. In a large skillet over high heat, heat 2 teaspoons of oil. Stir in chicken along with half the garlic and ginger. Cook and stir 6-7 minutes until chicken is no longer pink. Remove from skillet and keep warm. Reduce heat to medium-high. Heat remaining oil and add broccoli, celery and remaining garlic and ginger. Cook and stir 2 minutes. Add green onions, cook and stir 2 minutes more. Return chicken to the skillet and stir in sauce. Bring to a boil. Remove from heat. Stir in cooked noodles, sprinkle with cashews and serve immediately.
