3 lbs ground beef
1 pkg onion soup mix
2 eggs
2 boxes stuffing (chicken)
salt and pepper to taste
large sheet of wax paper

Directions:
Directions:
Preheat oven 350º. Prepare stuffing according to directions on the box, cover and set aside. In a large bowl mix ground beef, onion soup mix, and eggs. Flatten meat mixture out on the wax paper. Make into a triangle shape about 1 in thick. Spread stuffing on top of the the ground beef mixture. Leave about 1 inch from the edge and flatten so it sticks to the ground beef. Use the wax paper to roll it up jelly roll style and pinch end so stuffing doesn't fall out while baking. Place seam side down, cover with foil and bake for 45 min., remove foil and cut meatloaf in half and finish baking. Let cool for 10 min. before slicing. Serve with you favorite side dish.
