1 3/4 cup cake flour, sifted
1 cup raisins, a little flour sifted over
1/2 t salt
1 t soda
1 t cinnamon
1/2 t cloves
1 cup sugar, white or brown
1/2 cup butter
1 each egg
1 cup applesauce

Cream Cheese Frosting

4 oz. cream cheese, softened
6 oz. butter, softened
1 tsp. vanilla
some confectioners sugar
some milk

Directions:
Directions:
Cream butter with sugar until light. Beat in egg. Stir in sifted flour mixture gradually until batter is smooth. Add raisins and applesauce. Bake in foil cupcake cups in muffin tins at 350 degrees for 25 minutes. Frost.

For the frosting, whip cream cheese and butter until light. Add vanilla and confectioners sugar to get a sweet, stiff mixture. Add milk and whip until soft and light.

A little bit of trouble to make, but worth it. They don't need to be frosted as they come out with crispy muffin tops! But cream cheese frosting is always good! I don't usually keep applesauce on hand, so cut up and microwave one apple (peeled or not) and then process in the food processor with a bit of cinnamon and brown sugar.
