Red Pepper Chicken Recipe

Ingredients: Chicken 2 chicken breasts, ½ inch strips 2 T soy sauce 2 T cornstarch 1 egg white 4 cloves garlic, crushed
Sauce
2 small red bell peppers, strips ½ t fresh ginger 2 T dry sherry 4 T soy sauce 1 T honey ½ cup red wine 2 T rice vinegar some Srirachi hot sauce

Directions: |
Directions:Mix chicken ingredients and marinate for at least 30 minutes. Mix sauce. Stir fry peppers in an almost dry wok until lightly charred. Remove. Stir fry chicken in oil until almost done. Add sauce and boil down. Place all in bowl over red peppers. Eat hot or at room temperature. Great for picnics. |

Notes: A great picnic or party recipe. Tastes just as good at room temperature and keeps really well. Dan found it in an old cookbook and we keep the recipe safe! I remember making this for a trip to Shelby State Park, a site of a Civil War Battle. We took it out in a Tupperware container...this might even have been before we were married in 1980. I remember goping there one time and our new dog got loose and started chasing something. We got him bach when Dan pretended to fall and our dog came back to make sure Dan was okay.
Over the years, the amount of peppers has increased and the meat decreased. It is really good pour over rice with lots of sauce. You can thicken the sauce to taste with a cornstarch slurry...cornstarch mixed with cold water and then added to the bubbling sauce.
