6 lb tomatoes, coarsely chopped
1/4 cup butter
2 stalks celery, finely diced
sugar
salt
pepper

Directions:

Melt butter in large pot. Add tomatoes and bring to a boil, stirring frequently. Reduce heat, cover and simmer 20 minutes. Strain tomatoes through sieve, pressing with back of spoon. Add diced celery and bring to a boil. Cook 5 minutes. Season with sugar, salt, and pepper. Cream is optional.

This is another very simple, but very good recipe. Fresh tomato soup, with only a little but of effort. I use the old time Foley food mill to separate the skins from tomato/sauce, so it's a small bit of effort. But probably the best way to do it. The food processor would leave all the skins in small bits, I'm afraid. Charlotte loves this soup.
