2 avocados - ripe but not mushy, all green no brown spots
1/4 cup chopped cilantro
1/2 cup diced seeded tomatoes
1 jalapeno seeded and diced - 3 T( start with one, I almost always end up with two but you never know how hot they will be)
1/2 cup finely diced red onion
salt and pepper to taste
2 T Lime juice

In a large glass bowl place the seeded avocado halves, and top them with all the other ingredients. I always do the avocado first, more then once I have done all the chopping only to find out my avocados are bad and I can't make any guacamole. With a large metal tablespoon mix everything together using the side of the spoon to chop up the avocado as you mix. Check the seasoning when the avocado pieces are still a bit larger then you want at the end. Taste it, and then make any needed adjustments, and mix more. This will keep your guacamole chunky, and not all smooth.

Variations - I add any or some mixture of the following depending on what I am serving it with: cumin, minced chipotle pepper, chipotle pepper powder, ancho chile powder or fresh minced garlic.
