Dressing:
8 slices bacon, fried crisp, drained and crumbled
2 tbsp. reserved bacon drippings
1/2 c. vinegar (basalmic or malted are best)
1/4 c. white or brown sugar
1/4 tsp. garlic powder
1/2 tsp. onion powder
black pepper


Salad:
1 bunch fresh spinach
4 hard boiled eggs
You can also add mushrooms and/or carrots

Prepare salad first. Wash carefully in cold water, pinch of stems and tear, DON'T CUT, into bite size pcs. Hold spinach in ice water until ready to toss w/ other ingredients. (this makes it very crisp)

Chop the eggs finely and sprinkle w/ paprika if desired. In the pan used to fry the bacon; drain off the excess grease and reserve 2 tbsp, return pan to low heat. Add vinegar, sugar, and spices, stirring and heating (do not boil) till sugar dissolves and pan is somewhat deglazed. Remove from heat.

Just before serving, add bacon to dressing and mix. Quickly poor over salad and toss. Add eggs and serve IMMEDIATELY (or else it will wilt and become soggy).
